Amaranthus tricolor

Red leaf-amaranth (Amaranthus tricolour) is widely grown in Asia, chiefly in China. It is very decorative with palette-like leaves in green and wine-red. Leaf Amaranth likes hot weather and is affected by frost. It should be pre-grown indoors in most of the country and should not be planted outside until the risk of frost is truly over and the land has grown warmer. It grows quickly. The young leaves and shoots are eaten, poached, stir-fried, stewed and sometimes raw. The leaves are a bit meaty and very rich in nutrients, especially iron and calcium. A portion contains about 500 seeds.
